This week

What is cooking

A short card, rewritten on Mondays

The card here is never printed to last a season. What follows is roughly what has been on it this week, and by the time you arrive two of these will have gone and something else will have taken their place.

To start

  • Chipa, hot, with butter that is salted here
  • Hearts of palm with lime and coriander
  • Empanadas, two kinds, one of them always mandioca and cheese
  • A clear broth with river fish, on cold evenings only

After that

  • Surubí grilled over wood, when the river has given us any
  • Beef from Corrientes, cooked one way, which is slowly
  • Mandioca baked with cheese and black pepper, served here as a main course
  • A vegetable plate that changes with the Wanda delivery and gets as much care as anything else
  • Dulce de leche, once, at the end, and nobody is allowed to refuse it
